  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 2 tbsp tzatziki sauce

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Coat chicken with olive oil, oregano, garlic powder, salt, and pepper.
  3. Cook chicken for 5-7 minutes per side until fully cooked.
  4. Let chicken rest for 3 minutes, then slice.
  5. Divide quinoa between two bowls.
  6. Top with chicken, cucumber, tomatoes, red onion, feta, and olives.
  7. Drizzle with tzatziki sauce.
  8. Serve immediately.
