A refreshing Greek-inspired orzo salad packed with fresh vegetables, herbs, and feta cheese.

Ingredients

  • 1 cup uncooked orzo pasta
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked orzo, cucumber, tomatoes, red onion, olives, feta, parsley, and mint.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over salad and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

  • Add grilled chicken for extra protein.
  • Substitute quinoa for orzo for a gluten-free option.
  • Best served chilled.
