Greek stuffed peppers are a flavorful and healthy dish filled with a mixture of rice, herbs, and ground meat. Perfect for a hearty meal.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1/2 lb ground beef
  • 1/2 lb ground lamb
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers and remove seeds and membranes.
  3. In a pan, brown ground beef and lamb with onion and garlic.
  4. Add rice, tomatoes, oregano, salt, and pepper. Mix well.
  5. Spoon filling into peppers and place in a baking dish.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil, sprinkle with feta cheese, and bake for 10 more minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • Use a mix of red and green peppers for color.
  • Replace meat with lentils for a vegetarian version.
  • Refrigerate leftovers for up to 3 days.
