  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  3. Add chicken cubes to the marinade and coat evenly. Let sit for 15 minutes.
  4. Thread chicken and vegetables onto skewers alternately.
  5. Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through.
  6. Serve immediately.

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
