A hearty grilled steak salad with fresh vegetables and a tangy dressing

Ingredients

  • 1 lb flank steak
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled blue cheese
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat
  2. Season steak with salt and pepper
  3. Grill steak for 4-5 minutes per side
  4. Let steak rest for 5 minutes before slicing
  5. Toss greens, tomatoes, and onion in a bowl
  6. Whisk together oil, vinegar, and mustard
  7. Add dressing to salad and toss
  8. Top with sliced steak and blue cheese
