- 1 lb flank steak
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled blue cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Preheat grill to medium-high heat
- Season steak with salt and pepper
- Grill steak for 4-5 minutes per side
- Let steak rest for 5 minutes before slicing
- Toss greens, tomatoes, and onion in a bowl
- Whisk together oil, vinegar, and mustard
- Add dressing to salad and toss
