- 2 lbs boneless, skinless chicken breasts, cut into cubes
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup pineapple juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup pineapple chunks
- Wooden skewers, soaked in water
- In a bowl, mix soy sauce, brown sugar, pineapple juice, olive oil, garlic, and ginger to make the marinade.
- Add chicken cubes to the marinade, cover, and refrigerate for at least 2 hours.
- Preheat grill to medium-high heat.
- Thread chicken, bell pepper, red onion, and pineapple chunks onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Serve hot.
