Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 6 corn tortillas
  • 1 cup shredded cheese

Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Transfer the mixture to the slow cooker.
  4. Add black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, and salt. Stir well.
  5. Layer corn tortillas on top of the mixture.
  6. Sprinkle shredded cheese over the tortillas.
  7. Cover and cook on low for 4 hours.
  8. Serve hot.
