  • 1/2 tsp salt
  • 2/3 cup unsalted butter, chilled
  • 45 tbsp ice water
  • 3 large heirloom tomatoes, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix flour and salt in a bowl. Cut in butter until crumbly.
  3. Add water, 1 tbsp at a time, until dough forms.
  4. Roll out dough and place in a pie dish. Chill for 15 minutes.
  5. Layer half the cheese, tomatoes, and herbs in the crust.
  6. Repeat layers, ending with cheese.
  7. Brush crust edges with egg wash.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool for 10 minutes before slicing.

Notes

  • Use ripe but firm tomatoes to avoid excess moisture.
  • Blind bake the crust for 10 minutes if you prefer it extra crisp.
  • Pat tomato slices dry with paper towels to reduce sogginess.
