- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp black pepper
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
- 1 tbsp dried sage
- 4 garlic cloves, minced
- 1 lemon, halved
- Preheat oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Mix olive oil, salt, pepper, thyme, rosemary, sage, and minced garlic in a bowl.
- Rub the herb mixture all over the chicken, including under the skin.
- Place lemon halves inside the chicken cavity.
- Place chicken in a roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.
