A simple and flavorful herb roasted chicken that’s perfect for any occasion.

Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tbsp dried sage
  • 4 garlic cloves, minced
  • 1 lemon, halved

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Mix olive oil, salt, pepper, thyme, rosemary, sage, and minced garlic in a bowl.
  4. Rub the herb mixture all over the chicken, including under the skin.
  5. Place lemon halves inside the chicken cavity.
  6. Place chicken in a roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before carving.

Notes

  • Use fresh herbs for stronger flavor if available.
  • Check doneness with a meat thermometer.
  • Letting the chicken rest ensures juiciness.
