- 1 1/2 cups warm water (110°F/45°C)
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 packet active dry yeast
- 4 1/2 cups all-purpose flour
- 2 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk, beaten
- 1 tablespoon water
- Coarse salt for sprinkling
- Dissolve sugar and salt in warm water. Sprinkle yeast on top and let sit for 5 minutes until frothy.
- Stir in melted butter and flour. Knead dough for 5-7 minutes until smooth.
- Place dough in a greased bowl, cover, and let rise for 1 hour.
- Preheat oven to 450°F (230°C).
- Bring 10 cups of water and baking soda to a boil in a large pot.
- Divide dough into 8 pieces. Roll each into a rope and shape into a pretzel.
- Boil each pretzel for 30 seconds, then place on a baking sheet.
- Brush with egg wash and sprinkle with coarse salt.
- Bake for 12-14 minutes until golden brown.
