- 2 lbs beef stew meat, cut into chunks
- 1/4 cup honey
- 1/4 cup balsamic vinegar
- 2 cups beef broth
- 2 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Heat olive oil in a pan over medium heat. Brown the beef chunks on all sides.
- Transfer beef to slow cooker.
- Add honey, balsamic vinegar, beef broth, carrots, potatoes, onion, garlic, salt, and pepper.
- Cook on low for 8 hours or high for 4 hours.
- Serve hot.
Notes
- For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir in during last 30 minutes of cooking.
- You can substitute sweet potatoes for regular potatoes.
