  • 2 cups jackfruit, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/2 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups vegetable broth
  • 1/2 cup milk
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 pie crust

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, melt butter and sauté onion, garlic, carrots, celery, and jackfruit for 5 minutes.
  3. Add flour and stir to coat the vegetables.
  4. Pour in vegetable broth and milk, stirring until thickened.
  5. Add peas, thyme, salt, and pepper. Mix well.
  6. Transfer the filling to a pie dish and cover with the pie crust.
  7. Bake for 30 minutes or until the crust is golden brown.
  8. Let cool for 5 minutes before serving.

Notes

  • Use canned jackfruit for convenience.
  • For a vegan version, replace butter with oil and milk with plant-based milk.
  • Store leftovers in the fridge for up to 3 days.
