A low-carb, high-fat lasagna made in a crockpot. Perfect for keto diets.

Ingredients

  • 1 lb ground beef
  • 1/2 lb Italian sausage
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups low-carb marinara sauce
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 large zucchini, sliced thin

Instructions

  1. Brown the ground beef and Italian sausage in a skillet over medium heat. Drain excess fat.
  2. In a bowl, mix ricotta, egg, Parmesan, and half the mozzarella.
  3. Spread a thin layer of marinara sauce in the crockpot.
  4. Layer zucchini slices, meat mixture, cheese mixture, and sauce. Repeat until ingredients are used.
  5. Top with remaining mozzarella.
  6. Cook on low for 4 hours or high for 2 hours.

Notes

  • Let it rest for 10 minutes before serving.
  • Store leftovers in the fridge for up to 3 days.
