- 1 cup natural peanut butter (unsweetened)
- 1/2 cup coconut oil (melted)
- 1/4 cup cocoa powder (unsweetened)
- 1/4 cup powdered erythritol or preferred keto sweetener
- 1 tsp vanilla extract
- Pinch of salt
- Line a muffin tin with 12 cupcake liners.
- In a bowl, mix peanut butter, half the melted coconut oil, half the sweetener, and vanilla extract until smooth.
- Spoon the peanut butter mixture into the cupcake liners, filling each halfway. Freeze for 10 minutes.
- In another bowl, mix cocoa powder, remaining coconut oil, remaining sweetener, and salt until smooth.
- Pour the chocolate mixture over the peanut butter layer in each cup.
- Freeze for 20 minutes or until firm. Store in the fridge.
