Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup blueberries
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas, sugar, melted butter, egg, lemon juice, and lemon zest.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients. Fold in blueberries.
  5. Pour batter into the loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool before slicing.

Notes

  • Use ripe bananas for extra sweetness.
  • Dust blueberries with flour to prevent sinking.
