- 1 1/2 cups whole wheat flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1 cup mixed berries (blueberries, raspberries, strawberries)
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix whole wheat flour, almond flour, baking powder, baking soda, and salt.
- In another bowl, whisk the egg, honey, applesauce, almond milk, and vanilla extract.
- Combine wet and dry ingredients. Fold in the berries.
- Spoon the batter into the muffin tin, filling each cup 2/3 full.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Let muffins cool before serving.
Notes
- Use frozen berries if fresh ones are not available.
- Store muffins in an airtight container for up to 3 days.
- For extra richness, add 1/4 cup of coconut oil.
