Light and airy low-sugar meringues with a crisp exterior and soft center.

Ingredients

  • 4 large egg whites
  • 1/4 cup granulated sugar substitute (like erythritol)
  • 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar

Instructions

  1. Preheat oven to 200°F (95°C). Line a baking sheet with parchment paper.
  2. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar substitute, one tablespoon at a time, while continuing to beat.
  4. Add vanilla extract and beat until stiff peaks form.
  5. Spoon or pipe meringue onto prepared baking sheet.
  6. Bake for 1.5 hours, then turn off oven and let meringues cool inside for another hour.

Notes

  • Ensure bowl and beaters are completely grease-free for best results
  • Store in airtight container for up to 1 week
  • Add food coloring if desired
