- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet (1 oz) taco seasoning
- 4 cups chicken broth
- 1 cup shredded cheese (optional)
- 1/2 cup sour cream (optional)
- 1/4 cup chopped cilantro (optional)
- Place chicken breasts in the crock pot.
- Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken and shred with forks. Return to the crock pot.
- Stir well and serve hot with shredded cheese, sour cream, and cilantro if desired.
