A simple and flavorful chicken taco soup made in a crock pot.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet (1 oz) taco seasoning
  • 4 cups chicken broth
  • 1 cup shredded cheese (optional)
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Place chicken breasts in the crock pot.
  2. Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove chicken and shred with forks. Return to the crock pot.
  5. Stir well and serve hot with shredded cheese, sour cream, and cilantro if desired.

Notes

  • Use frozen chicken breasts for convenience.
  • Adjust taco seasoning to your taste.
  • Store leftovers in an airtight container for up to 3 days.
