A simple and flavorful side dish made with mashed celery root and fresh parsley.

Ingredients

  • 1 large celery root (about 2 lbs), peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup milk or cream
  • 1/4 cup fresh parsley, finely chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and cube the celery root.
  2. Boil in salted water for 20-25 minutes until tender.
  3. Drain well and return to the pot.
  4. Add butter, milk, salt, and pepper.
  5. Mash until smooth or slightly chunky, as preferred.
  6. Stir in chopped parsley before serving.

Notes

  • For a creamier texture, add more milk or cream.
  • Substitute butter with olive oil for a dairy-free version.
