A fresh and flavorful Mediterranean chickpea salad packed with protein and vegetables.

Ingredients

  • 2 cups cooked chickpeas
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas.
  2. Combine chickpeas, cucumber, bell pepper, red onion, cherry tomatoes, olives, and feta cheese in a large bowl.
  3. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss gently to coat.
  5. Serve chilled or at room temperature.
