A fresh and vibrant pasta salad with Mediterranean flavors.

Ingredients

  • 250g pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. Combine tomatoes, cucumber, red onion, olives, and feta in a large bowl.
  3. Add cooled pasta to the bowl.
  4. Whisk olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  5. Pour dressing over salad and toss to combine.
  6. Serve chilled.
