A hearty and flavorful Mexican chicken soup, perfect for a comforting meal.

  • 1 whole chicken, cut into pieces
  • 8 cups water
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, sliced
  • 1 potato, diced
  • 1 cup corn kernels
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tbsp cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, add the chicken pieces and water. Bring to a boil.
  2. Reduce heat to a simmer and add the onion, garlic, carrots, celery, salt, pepper, cumin, and oregano. Cook for 30 minutes.
  3. Remove the chicken pieces and shred the meat. Return the shredded chicken to the pot.
  4. Add the zucchini, potato, and corn. Cook for an additional 15 minutes.
  5. Stir in the chopped cilantro.
  6. Serve hot with lime wedges on the side.

Notes

  • You can add other vegetables like chayote or green beans.
  • For extra flavor, add a bay leaf while simmering.
