- 1 whole chicken, cut into pieces
- 8 cups water
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, sliced
- 1 potato, diced
- 1 cup corn kernels
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp oregano
- 2 tbsp cilantro, chopped
- 1 lime, cut into wedges
- In a large pot, add the chicken pieces and water. Bring to a boil.
- Reduce heat to a simmer and add the onion, garlic, carrots, celery, salt, pepper, cumin, and oregano. Cook for 30 minutes.
- Remove the chicken pieces and shred the meat. Return the shredded chicken to the pot.
- Add the zucchini, potato, and corn. Cook for an additional 15 minutes.
- Stir in the chopped cilantro.
- Serve hot with lime wedges on the side.
Notes
- You can add other vegetables like chayote or green beans.
- For extra flavor, add a bay leaf while simmering.
