  • 1/2 cup white rice
  • 1 egg
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 cups chicken broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 2 garlic cloves, minced
  • 1 lime, juiced

Instructions

  1. Mix ground beef, rice, egg, mint, cilantro, cumin, salt, and pepper in a bowl. Roll into 1-inch meatballs.
  2. Heat broth and water in a large pot. Add diced tomatoes, onion, carrots, celery, and garlic. Bring to a boil.
  3. Carefully drop meatballs into the boiling broth. Reduce heat, cover, and simmer for 20 minutes.
  4. Add zucchini and cook for another 10 minutes until meatballs and vegetables are tender.
  5. Stir in lime juice before serving.
