- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 2 tbsp chopped cilantro
- Salt to taste
- Heat a skillet over medium heat. Add corn and cook for 5 minutes until lightly charred.
- In a bowl, mix mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, cayenne, garlic, lime juice, and cilantro.
- Stir in the cooked corn and mix well.
