A creamy and flavorful dip inspired by Mexican street corn, perfect for parties or snacks.

Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 2 tbsp chopped cilantro
  • Salt to taste

Instructions

  1. Heat a skillet over medium heat. Add corn and cook for 5 minutes until lightly charred.
  2. In a bowl, mix mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, cayenne, garlic, lime juice, and cilantro.
  3. Stir in the cooked corn and mix well.
  4. Season with salt to taste.
  5. Serve warm with tortilla chips or sliced vegetables.

Notes

  • Use grilled corn for extra smokiness.
  • Adjust spiciness by adding more or less cayenne.
