1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3–4 tablespoons ice water
2 medium apples, peeled and thinly sliced
2 tablespoons granulated sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1 egg, beaten (for egg wash)
1 tablespoon coarse sugar (for sprinkling)
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, mix flour and salt. Add cold butter and cut it into the flour until the mixture resembles coarse crumbs.
Add ice water, one tablespoon at a time, and mix until the dough comes together. Shape into a disk and chill for 30 minutes.
In another bowl, toss apple slices with granulated sugar, cinnamon, and lemon juice.
Roll out the dough and cut into 4-6 small circles. Place on the baking sheet.
Divide the apple mixture among the dough circles, leaving a border. Fold the edges over the filling.
Brush the edges with egg wash and sprinkle with coarse sugar.
Bake for 25-30 minutes until golden brown. Cool slightly before serving.
