Mini apple galettes are delightful, rustic individual pies with a flaky crust and sweet apple filling. They are easy to make and perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tablespoons ice water
  • 2 medium apples, peeled and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour and salt. Add cold butter and cut it into the flour until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, and mix until the dough comes together. Shape into a disk and chill for 30 minutes.
  4. In another bowl, toss apple slices with granulated sugar, cinnamon, and lemon juice.
  5. Roll out the dough and cut into 4-6 small circles. Place on the baking sheet.
  6. Divide the apple mixture among the dough circles, leaving a border. Fold the edges over the filling.
  7. Brush the edges with egg wash and sprinkle with coarse sugar.
  8. Bake for 25-30 minutes until golden brown. Cool slightly before serving.
