- 1 cup cooked chicken, shredded
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 4 small flour tortillas
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt to taste
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until soft.
- Add shredded chicken, cumin, paprika, and salt. Stir well.
- Place tortillas on a flat surface and spread the chicken mixture on one half.
- Sprinkle cheese on top of the chicken mixture.
- Fold the tortillas in half to cover the filling.
- Heat a clean pan over medium heat and cook each quesadilla for 2-3 minutes per side until golden.
- Cut into wedges and serve warm.
