Quick and easy mini chicken quesadillas perfect for snacks or appetizers.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 4 small flour tortillas
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Add shredded chicken, cumin, paprika, and salt. Stir well.
  4. Place tortillas on a flat surface and spread the chicken mixture on one half.
  5. Sprinkle cheese on top of the chicken mixture.
  6. Fold the tortillas in half to cover the filling.
  7. Heat a clean pan over medium heat and cook each quesadilla for 2-3 minutes per side until golden.
  8. Cut into wedges and serve warm.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add jalapeños for extra spice.
  • Serve with salsa or sour cream for dipping.
