- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1 tbsp ice water
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 tbsp heavy cream
- Preheat oven to 350°F (175°C).
- Mix flour and powdered sugar in a bowl.
- Cut in butter until mixture resembles crumbs.
- Add egg yolk and ice water, mix until dough forms.
- Press dough into mini tart pans and chill for 15 minutes.
- Bake crusts for 10 minutes, then let cool.
- Whisk sugar, eggs, lemon juice, lemon zest, and heavy cream in a bowl.
- Pour filling into crusts and bake for 12-15 minutes until set.
- Cool completely before serving.
