  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1 tbsp ice water
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour and powdered sugar in a bowl.
  3. Cut in butter until mixture resembles crumbs.
  4. Add egg yolk and ice water, mix until dough forms.
  5. Press dough into mini tart pans and chill for 15 minutes.
  6. Bake crusts for 10 minutes, then let cool.
  7. Whisk sugar, eggs, lemon juice, lemon zest, and heavy cream in a bowl.
  8. Pour filling into crusts and bake for 12-15 minutes until set.
  9. Cool completely before serving.
