  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup coarse sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add egg and molasses; mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Roll dough into 1-inch balls, then roll in coarse sugar.
  6. Place balls 2 inches apart on baking sheets. Bake for 10-12 minutes.
  7. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack.

  • Store in an airtight container for up to 5 days.
  • Dough can be chilled for 30 minutes for easier handling.
  • Use dark molasses for a stronger flavor.
