A hearty Moroccan chickpea stew packed with warm spices and vegetables.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 carrot, chopped
  • 1 bell pepper, diced
  • 1 can (15 oz) chickpeas, drained
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in cumin, coriander, paprika, turmeric, and cinnamon.
  4. Add carrot and bell pepper, cook for 5 minutes.
  5. Pour in chickpeas, diced tomatoes, and vegetable broth.
  6. Simmer for 20 minutes.
  7. Add spinach and cook until wilted.
  8. Season with salt and pepper.

Notes

  • Serve with couscous or bread.
  • Replace spinach with kale if preferred.
  • Adjust spices to taste.
