A delicious and hearty dish featuring a roasted pumpkin stuffed with a savory mixture of mushrooms, spinach, and herbs.

  • 1 medium pumpkin (about 34 lbs)
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds and pulp.
  3. Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
  4. Add mushrooms and cook until tender. Stir in spinach until wilted.
  5. Remove from heat and mix in breadcrumbs, Parmesan cheese, thyme, salt, and pepper.
  6. Fill the pumpkin with the stuffing mixture.
  7. Place the pumpkin on a baking sheet and roast for 45-60 minutes, or until tender.
  8. Let cool slightly before serving.

  • Customize the stuffing with your favorite herbs or cheese.
