  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 1.5 lbs mixed mushrooms, sliced
  • 1 tablespoon tomato paste
  • 2 cups red wine
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and carrots, cook until softened.
  3. Stir in garlic and mushrooms, cook until mushrooms release their liquid.
  4. Add tomato paste and cook for 1 minute.
  5. Pour in red wine and simmer until reduced by half.
  6. Add vegetable broth, thyme, and bay leaf.
  7. Simmer for 30 minutes until sauce thickens.
  8. Season with salt and pepper.
  9. Serve hot over mashed potatoes or pasta.
