- 250g mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- Heat butter and olive oil in a pan over medium heat.
- Add onions and garlic, cook until soft.
- Add mushrooms, thyme, salt, and pepper. Cook until mushrooms release their liquid.
- Stir in heavy cream and lemon juice. Cook for 2 more minutes.
- Transfer mixture to a blender and blend until smooth.
- Chill for at least 1 hour before serving.
Notes
- Store in an airtight container for up to 3 days.
- Serve with crackers or toasted bread.
- For a vegan version, replace butter with olive oil and heavy cream with coconut cream.
