Ingredients

  • 1 9-inch pie crust
  • 4 large tomatoes, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place tomato slices in a colander and sprinkle with salt. Let drain for 10 minutes.
  3. Layer tomatoes in the pie crust. Sprinkle with black pepper.
  4. Mix mayonnaise, cheddar cheese, and basil in a bowl. Spread over tomatoes.
  5. Sprinkle Parmesan cheese on top.
  6. Bake for 30 minutes or until golden brown.
  7. Cool for 10 minutes before slicing.

Notes

  • Use ripe but firm tomatoes for best results.
  • Blot tomato slices with a paper towel to remove excess moisture.
