  • 1 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 2 cups cooked chicken, shredded
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots. Sauté for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth, heavy cream, and milk. Stir well.
  5. Season with salt, pepper, and thyme. Bring to a simmer.
  6. Add shredded chicken and gnocchi. Cook for 5 minutes.
  7. Stir in spinach and cook until wilted, about 2 minutes.
  8. Remove from heat and sprinkle with Parmesan cheese.
  9. Serve hot.
