Ingredients

8 oz penne or spaghetti
2 tbsp olive oil
1 cup broccoli florets
1 bell pepper, sliced
1 zucchini, sliced
1 carrot, julienned
2 cloves garlic, minced
1/4 cup vegetable broth
1/4 cup heavy cream
1/2 cup grated parmesan
Salt and pepper to taste
Instructions
Cook pasta according to package directions
Heat olive oil in large skillet over medium heat
Add vegetables and sauté for 5 minutes
Stir in garlic and cook 1 more minute
Pour in broth and cream, simmer 3 minutes
Drain pasta and add to skillet
Toss with parmesan and seasonings
Notes
Use any seasonal vegetables you prefer
For vegan version, omit cream and use nutritional yeast instead of parmesan
Add protein like grilled chicken or shrimp if desired
