1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
3 cups powdered sugar
12 ounces semi-sweet chocolate chips
1 tablespoon vegetable shortening
Instructions
Mix peanut butter, butter, and vanilla in a bowl until smooth.
Gradually add powdered sugar until dough forms.
Roll dough into 1-inch balls and place on a baking sheet.
Chill balls in the fridge for 30 minutes.
Melt chocolate chips and shortening in a double boiler.
Dip each ball into the chocolate, leaving a small area uncovered.
Place buckeyes back on the baking sheet and chill until set.
