  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • For streusel: 1/4 cup flour, 1/4 cup brown sugar, 2 tbsp butter, 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line muffin tin with paper liners.
  2. Mix flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. In another bowl, whisk pumpkin puree, oil, and eggs.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill muffin cups 3/4 full.
  6. Make streusel: Mix flour, brown sugar, cinnamon, and butter until crumbly.
  7. Sprinkle streusel over muffin batter.
  8. Bake 18-20 minutes or until a toothpick comes out clean.
