A quick and flavorful fried rice dish with pineapple, vegetables, and your choice of protein.

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 2 eggs, beaten
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp fish sauce (optional)
  • 1/4 tsp white pepper
  • 2 green onions, sliced

Instructions

  1. Heat oil in a wok or large pan over medium-high heat.
  2. Add garlic and stir for 10 seconds until fragrant.
  3. Push garlic to one side, pour eggs into the pan and scramble.
  4. Add carrots and peas, stir-fry for 2 minutes.
  5. Add rice, breaking up any clumps.
  6. Mix in soy sauce, fish sauce, and white pepper.
  7. Add pineapple and stir-fry for 1 minute.
  8. Garnish with green onions before serving.

Notes

  • Use cold rice for best texture
  • Add cooked chicken or shrimp for protein
  • Adjust soy sauce to taste
