Ingredients

  • 1 cup barley, cooked
  • 1 cup pumpkin, diced
  • 2 cups kale, chopped
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1 tbsp lemon juice
  • 2 tbsp feta cheese (optional)

Instructions

  1. Cook barley according to package instructions. Set aside.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
  3. Add diced pumpkin and cook for 5-7 minutes until tender.
  4. Stir in kale, salt, pepper, paprika, and cumin. Cook for 2-3 minutes until kale wilts.
  5. Add cooked barley and lemon juice. Mix well.
  6. Serve warm, topped with feta cheese if desired.
