- 1 cup barley, cooked
- 1 cup pumpkin, diced
- 2 cups kale, chopped
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1 tbsp lemon juice
- 2 tbsp feta cheese (optional)
- Cook barley according to package instructions. Set aside.
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Add diced pumpkin and cook for 5-7 minutes until tender.
- Stir in kale, salt, pepper, paprika, and cumin. Cook for 2-3 minutes until kale wilts.
- Add cooked barley and lemon juice. Mix well.
- Serve warm, topped with feta cheese if desired.
