Delicious pumpkin cheesecake bars with a creamy filling and a spiced crust.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan.
  3. Bake crust for 10 minutes. Let cool.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time.
  5. Mix in pumpkin puree, vanilla, and spices.
  6. Pour filling over crust. Bake for 30-35 minutes.
  7. Let cool, then refrigerate for at least 4 hours.
  8. Cut into bars and serve chilled.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
  • For smoother texture, blend filling before baking.
