Delicious pumpkin cheesecake bars with a spiced crust, creamy filling, and perfect for fall.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the pan.
  3. Bake crust for 8 minutes, then let cool.
  4. Beat cream cheese and sugar until smooth. Add pumpkin, eggs, vanilla, and pumpkin pie spice.
  5. Pour filling over crust and smooth the top. Bake for 40 minutes.
  6. Let cool completely, then refrigerate for 4 hours before slicing.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • For cleaner slices, chill bars overnight.
