  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix pumpkin puree, oil, eggs, and sugars until smooth.
  3. In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Combine wet and dry ingredients. Fold in pecans.
  5. Divide batter evenly into muffin cups. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack.
