- 2 cups water
- 1 cup pumpkin puree
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1 avocado, sliced
- 1/4 cup roasted chickpeas
- 2 tbsp pumpkin seeds
- 1 tbsp lemon juice
- Rinse quinoa under cold water and drain.
