Soft and fluffy pumpkin scones with a sweet glaze, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup pumpkin puree
  • 3 tbsp milk
  • 1 large egg
  • 1 tsp vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tbsp milk, 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. In another bowl, mix pumpkin puree, milk, egg, and vanilla.
  5. Stir wet ingredients into dry ingredients until just combined.
  6. Turn dough onto a floured surface and shape into a 1-inch thick circle.
  7. Cut into 8 wedges and transfer to the baking sheet.
  8. Bake for 12-15 minutes until golden brown.
  9. Cool slightly before drizzling with glaze.

Notes

  • Use cold butter for flaky scones.
  • Do not overmix the dough.
  • Store in an airtight container for up to 3 days.
