- 1 cup pumpkin puree
- 3 eggs, separated
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup milk
- 1 tbsp butter
- 1 tbsp flour
- Preheat oven to 375°F (190°C).
- Butter and sugar four ramekins.
- Mix pumpkin puree, egg yolks, sugar, cinnamon, and nutmeg in a bowl.
- In a saucepan, melt butter, stir in flour, then slowly add milk to create a thick sauce.
- Combine pumpkin mixture with the sauce.
- Beat egg whites until stiff peaks form, then fold into pumpkin mixture.
- Fill ramekins and bake for 20-25 minutes.
- Serve immediately.
Notes
- Do not open the oven during baking to prevent collapsing.
