  • 1 tsp pumpkin pie spice

  • 1/4 tsp salt
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt in a bowl.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Alternate adding dry ingredients and coffee to the wet mixture, mixing until just combined.
  5. Divide batter evenly into cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting.
