A hearty and nutritious pasta bake combining pumpkin, spinach, and pasta in a creamy sauce.

Ingredients

  • 300g pasta
  • 200g pumpkin, diced
  • 100g spinach, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200ml cream
  • 50g grated cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 180°C.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add pumpkin and cook until tender.
  5. Stir in spinach and cook until wilted.
  6. Add cream, salt, and pepper. Simmer for 5 minutes.
  7. Combine pasta with the sauce and transfer to a baking dish.
  8. Sprinkle cheese on top and bake for 20 minutes until golden.

Notes

  • You can substitute cream with coconut milk for a dairy-free version.
  • Add chili flakes for extra heat.
  • Store leftovers in an airtight container for up to 3 days.
