Ingredients

  • 2 cups pumpkin, cubed
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add garlic and ginger, sauté for 30 seconds.
  3. Add pumpkin and cook for 5 minutes until slightly tender.
  4. Add bell pepper, carrot, and broccoli. Stir-fry for 4-5 minutes.
  5. Pour in soy sauce and season with salt and pepper.
  6. Cook for another 2 minutes until vegetables are crisp-tender.
  7. Serve hot.

  • Use firm pumpkin for better texture.
  • Adjust soy sauce based on preference.
