Ingredients

  • 2 cups pumpkin, cubed
  • 2 cups zucchini, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté onion and garlic until soft.
  3. Add pumpkin and zucchini, cook for 5 minutes.
  4. Season with salt, pepper, and thyme.
  5. Transfer to a baking dish and top with cheese and breadcrumbs.
  6. Bake for 25 minutes or until golden brown.
