- 2 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 tbsp red food coloring
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Preheat oven to 375°F. Line baking sheets with parchment paper.
- Whisk flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter and sugar until light. Beat in egg and vanilla.
- Mix in buttermilk and food coloring.
- Gradually add dry ingredients, mixing until just combined.
- Drop batter by tablespoons onto prepared sheets, spacing 2 inches apart.
- Bake for 10-12 minutes. Cool completely.
- For filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread filling on flat side of half the cookies, then top with remaining cookies.
